Which mayonnaise for which dish? A menu guide with a sample scorecard

"Mayonnaise for burger" gets about 110 searches a month in Pakistan. Behind that search is a real question for a restaurant. If you can pick from several mayonnaise flavours, which one goes where? There is no single right answer, because taste is personal. The ideas below follow the dishes shown on each Orino pack and the names of the products. They are starting points, not lab specifications, so ask for samples before you commit to a carton.

Burgers and sandwiches

Classic Mayonnaise is a sensible default for burgers, and its pouch shows a burger. Spread it on both halves of the bun and keep the rest of the burger simple. If you also sell a spicy burger, mix a little chilli garlic sauce into the same mayonnaise.

Wraps and rolls

Spread a thin layer on the bread before you add the filling. Real Mayonnaise (Regular) is a good one to try. For extra flavour, mix it with garlic or chilli garlic sauce. See the garlic mayo and shawarma sauce recipe.

Fries and snacks

Fries are the easiest place to try a new sauce. Mayo Topping is named for this job, and it works as a dip or a topping on loaded fries. Serve it next to ketchup so guests can mix the two.

Pizza

Pizza and mayonnaise work together as a drizzle. Real Mayonnaise (Regular) is shown with pizza on its pouch. Add it after baking, and pair it with a line of chilli garlic sauce for a hot and creamy finish.

Salads and cold dishes

Mayo Dressing is named for salads, and its pouch shows a salad. Loosen it with a little lemon juice or cold water if it feels too thick for your recipe.

Dips and spreads

Use Real Mayonnaise (Special) when mayonnaise is the main flavour, such as in dips, spreads and sandwiches. It also works as a base for garlic, herb or spicy dips.

How to run a sample test

A fair test removes opinions about the brand and keeps only the taste.

  1. Pick your three or four best-selling dishes.
  2. Ask the sales team for samples of two or three flavours.
  3. Make each dish with each sample, using the same portion, bread and cook.
  4. Hide the labels. Ask staff and a few regular guests to taste.
  5. Score each sample, then add up the totals.

Sample scorecard

Copy this table onto a sheet and score each sample from 1 to 5.

Question Sample A Sample B Sample C
Taste: is it creamy and balanced?
Spread: does it spread easily on bread?
Hold: does it stay put after 20 minutes?
Look: does it look good on the plate?
Fit: does it suit the dish?
Total

Add a column for cost per portion. A sample that scores a little lower but costs much less may be the better buy. Our guide to mayonnaise prices shows how to work out cost per portion.

A simple way to choose

  1. Pick your best-selling dishes.
  2. Test two or three flavours on each.
  3. Choose the flavour guests and staff like best.
  4. Check the cost per portion.
  5. Order by the carton once you decide. A carton holds four 4 kg pouches, or 16 kg.

You can see every pack on the products page, read about bulk supply for restaurants and send an enquiry when you are ready.

Frequently asked questions

Do I need more than one mayonnaise on my menu?

Not always. Many shops use one for burgers and sandwiches and a second for fries or salads. Start with one or two and add more if guests ask.

How many Orino mayonnaise flavours are there?

Five: Real Mayonnaise (Special), Real Mayonnaise (Regular), Classic Mayonnaise, Mayo Dressing and Mayo Topping. Each comes in a 4.0 kg pouch.

Can I try the mayonnaise before I order?

Ask the sales team about samples when you send your enquiry.

What is the best way to serve mayonnaise with fries?

Use a small bowl or a squeeze bottle, or give a sealed sachet with delivery orders.

How do I test two mayonnaises fairly?

Use the same dish, the same portion and the same cook. Taste without labels, and score each sample on taste, spread and appearance.
